PUDINA CHETIN ( MINT CHUTNEY ) version 1

My mom makes very very good chutneys she goes the traditional way using stoned mortar and pestle so much hard work goes in, carefully each ingredient is pounded and you have to be cautious of the spills. If you have one then please use it. I remember when I was small I would cover up my face with a dupatta to avoid the spills to go into my eyes as chillies used to worry me now I am an expert in handling it. This chutney is tasty spicy minty all good flavours I can say. My husband loves this chutney and when we visit my mother she always makes extra for him. I am using chopper here.

INGREDIENTS:

1 bunch of mint leaves
2 small onions
1 green chilly
1 tsp red chilly powder
salt to taste

METHOD:

Clean and wash the mint leaves and chop them up. Slice the onions and green chilly. In a chopper first put in the sliced onions. Give 2 to 3 pulse until the onions are nicely chopped up take them out. Next add in the mint leaves with some salt. Run the chopper until the mint is finely chopped, add in the green chilly, red chilly powder and again run the chopper. Now add in the previously chopped onions and run the chopper until all gets mixed up well. You can add a tbsp of water to make it easy to process. Taste the chutney for salt. Your chutney is ready to serve.

Note:
You can add 2 tbsps of thick curd after the chutney is made to give a variation. This also tastes very good. You can serve it with pakoras or roti.
