Aanchar ( pickle)

This vegetable pickle is my favorite as it is my moms recipe. Its tasty, crunchy and yummy. How a kashmiri pickle should be. My mom uses less spices and let's the veggies do it's own magic. No souring acid is added. The pickle is left for fermentation and after a course of time you get the perfect pickle, its crunchy and tasty. You can use any veggies of your choice.

Ingredients:
3 carrots
3 long white radishes
2 kohlrabi
10 to 13l2 garlic pearls
10 green chilly

3Tbsp Coriander seeds3 tbsp ajwain seeds / carom seeds 2 tbsp mustard seeds 

Few tbsp red chilly powder or as per your tatse
Salt to taste
1 cup smoked and cooled mustard oil

Method:
Clean and wash the vegetables. Cut them into bite size pieces. Keep them in hot water for 5 minutes And drain and dry them in sun or near breezy window in a colander for at few hours until they look dry( if in hurry pat them dry with paper towel)Then in a big vessel add all the vegetables. Next add in whole garlic pearls and whole green chillies. Then add in red chilly powder, coriander seeds,mustard seeds and ajwain seeds. Give a good mix with dry spatula or wear gloves and use hands. The masala should coat well with all vegetables. Then add in the salt. Give a good stir. ( always start with 1 tsp salt and if it needs more add in pinch by pinch). Rub all the spices well with the veggies. Now add  mustard oil into this and give a good stir. Transfer this into a big air tight glass jar. Squeeze in as much as possible the veggies. Close the lid tight and now shake the jar up and down carefully mixing all up. Your work is done. Now keep this jar in a warm place. I keep it in my kitchen. It will take 2 weeks for the pickle to get ready. After 2 weeks your pickle is ready. Then store it in refrigerator for longer use.

Note:
The pickling process may vary depending on your room temperature. If it's hot the pickle will get ready sooner and if its cold then longer. So keep checking after 3rd day. When your pickle is ready u will see the vegetables have left out lot of water. So keep an eye on it. Enjoy!!!
