Kashur kokur rass ( country chicken soup Kashmiri style)

It's a simple and heartwarming soup recipe which was passed down by my mother and it's not a fancy meal but its something which you must make once in a while. It's too good for your health. The turmeric and garlic do wonders with your body. Their antibiotic and antiseptic properties really brings a good change in your diet. I make it often for my children whenever they catch cold or just to boost up their immune system.
Its the same soup I had for complete 40days of my postpartum phase. It really made me energised.
Ingredients:
1kg country chicken
10 cloves of garlic
1tsp turmeric powder
1 tsp pepper powder
1tsp salt
1tbsp oil
1 onion thinly chopped.
Method;
1. Wash the chicken thoroughly and drain in colander.
2. In pressure cook heat oil and then add in chopped onion.
3. Fry onion until Brown then add in 3 to 4 cups of water and bring to rolling boil.( dont exceed 4 cups)
4. Add in chicken, salt and spices and garlic.
5. Once its boiling close the pressure lid.
6. Keep on high flame upto 2 whistles and then simmer down for 20 to 30 minutes.
7. Once pressure Is completely released open the lid. Have a quick taste. Check for seasoning.
8. Serve it warm with rice.
9. You can debone the chicken and discard the bones.
10. I serve with bones and we finish of soup and take our share of pieces.
