Marchwangan Korma ( spicy lamb curry)

Marchwangan means red chilly in kashmiri and as name says its a spicy dish from wazwaan getting heat from red chilly. I have tried to make it in a way which all can easily try.

Ingredients:
1kg  lamb/mutton with fat
1/3 cup brown onion paste

1 big cinnamon
2 black cardamoms
2 green cardamoms
2 cloves
1/2 tsp turmeric
1 tsp saunf/ fennel seed powder
1/2 tsp Shonth/ dry ginger powder
3 tsp red chilly powder or red chilly paste
1 pinch saffron
1 small cupDesi ghee
Salt as per taste                                           

1tbpsp garlic paste and 1/2 cup curd 

Brown onion paste: fry thinly slice2 onions in 1 tbsp ghee and grind to paste

Method:
Wash mutton well and let it drain in colander. In a cooking pot add in ghee( can put half oil)and let it heat. Then add in cardamon, cinnamon and cloves. Give a stir. Then add in drained mutton one by one. And fry this until the mutton is browned it will take few minutes. Add in curd and stir well. Meanwhile in a bowl add 2 cups water and add in 3tsp red chilly powder and saffron mix well and keep this mixture ready. Once mutton has browned add in brown onion paste, garlic paste, salt, turmeric, Shonth and fennel seed powder give good stir. Sprinkle some water so spices don't bburn.Then add in half red chilly mixture into this and give good stir keeping flame on low.After few seconds add in remaining red chilly mixture. Give a good stir. The gravy will be bright red in color. Keep stirring until you see oil leaving out on sides. Then add in 2 cups water and let it boil for 5minutes and then keep in simmer until mutton is cooked and gravy has thicken up a bit . Marchwangan korma is ready. Serve it with rice.

Tip: you can replace red chilly powder with red chilly paste. For red chilly paste: soak 6-7 dry red chilly in 1 cup water and grind to paste. Use this instead of red chilly powder. Do which is convineint for you. 

Note:
In Kashmir cuisine Pran( Kashmir shallots) and Mawal( dry cockscomb flower)  are used to make the traditional wazwaan recipes. But these are not easily available in market except being in Kashmir or you can order them online. As all can try I have replaced with onion & saffron.
