Pucche Gand te thool( spring onions and egg?

There are very few egg recipes which really outshine and this is one of them. Whenever the market is filled with fresh spring onions I pick them up to make this dish. Quite simple recipe and you would love to eat with some warm parathas or roti.
Ingredients:
3 spring onions bunch
4 large eggs
2 green chillies
1 tsp red chilly powder
1/2 tsp cumin powder
1/4tsp turmeric powder
Salt as per taste
Oil
METHOD:
1. Wash the spring onions well under running water. Chop them up.
2. In a vessel add oil. Once its hot add in the chopped spring onions.
3. Fry the chopped spring onions stirring occasionally. In a bowl whisk and keep the four eggs.
4. Add all spices and salt in the frying spring onions. Keep flame on low. Mix well.
5. Create a centre in the middle but pushing out the spring onions on sides.
6. Pour the eggs into that centre. And close the lid.
7. Once the eggs have started to cook gently stir to mix all.
8. Once the eggs are cooked well and mixed well with the spring onions add a half a glass of water.
9. Keep on high flame for few minutes. Then simmer down for few minutes
10. Serve with rice or roti of your choice.
