Turrel te maaz ( ridge gourd with mutton in gravy)

Summer has come and it's time to eat vegetables which are very healthy and which give you some relief from heat. Turrel (ridge gourd) is one such vegetable. Its light on stomach and contains lot of water. I make this with meat or chicken. Today I will share with you ridge gourd with mutton recipe.

Ingredients:
450grams mutton
2 long ridge gourd/turai/turrel
1 big onion sliced
2 tomatoes
5 garlic pearls
1 tsp cumin seeds/zeera/zeur
1/2 tsp turmeric/haldi/ladir
1tsp red chilly powder/lal mirch/marchwangan
Salt as per taste

Method:
Wash mutton and add in pressure cooker with one cup of water and cook until 75% done. Let it cool down and then drain it and reserve the stock we will use it later in the recipe. Now in a pot heat oil and add in mutton pieces. Keeping flame on low just brown the pieces. Next add in sliced onion and fry until the onion is translucent and soft. Then add in chopped tomatoes and garlic. Give a good stir with spatula. Keep it on Sim for few minutes stirring occasionally. Meanwhile wash and peel ridge gourd and cut them into round pieces. If the seeds are hard discard them. Once done add this to the cooking gravy and fry until it looses out lot of moisture. Add in salt, turmeric, chilly powder, cumin seeds and mix it all in and cook it for few more minutes. Then add the reserved mutton stock and increase the flame and let it come to a boil and once you see gravy has thickened and turrel is soft switch off the stove and garnish the dish with coriander leaves.Your turrel te maaz is ready. Serve it with rice. Enjoy!!
