Seekh kabab version 1

I generally make this kabab when I want to eat some grilled food. In wazwaan we have seekh kabab which is cooked perfectly on charcoal. At home I use grill plate or just bake it in oven. If you can grill them on charcoal will be best.

Ingredients:
500grams fresh lamb mince
1tsp red chilly powder
1/2 tsp turmeric
1tsp black cardamom seeds
Salt as per taste
1 egg white

Method:
Wash the mince well in water and drain it in colander at least for an hour. Then in mortar add in the mince meat and pound it with wooden pestle for sometime until you see the mince has started to change color then add in black cardamom seeds and pound it for few more minutes. Next add in red chilly powder, turmeric and salt. Pound for few more minutes. Your mince is ready. Transfer it into a bowl and add one egg white. Mix this all well. Now wet your palms and make equal big lemon size balls. Once all done. Its time to shape them up in a skewer. With help of your palm press the meat ball to form a tubular structure on the skewer. Do this with all meat balls and keep it ready. Heat grill plate and grill them until brown basking them with oil now and then. Kabab is ready. Serve them hot with onion rings and lemon wedges. Enjoy !!!

Tip:
You can make this in food processor if you don't have mortar and pestle. You can also add some mince garlic for flavour.
