Gande te maaz (onion and mutton curry)

This dish we use lot of onions. They give a pleasant sweet taste to the curry. You can make the same dish using lamb/chicken and for vegetarian version paneer. It goes well with all options.

INGREDIENTS :
700 grams onions sliced evenly
500 grams mutton washed well
6-7 garlic pearls
1 small cinnamon piece
1 Clove
1 tbsp red chilly powder
1 tsp cumin powder
1/2 tsp turmeric
1/2 tsp fennel powder
Salt as per taste
Oil for cooking
Water

METHOD :
1. Take a pressure cooker add in mutton pieces,salt and 2 glasses of water and give 3 whistles and switch off.
2. Once the pressure is released. Open the pressure cooker take out the mutton pieces using spoon into a bowl and reserve the stock.
3. Heat a cooking vessel add in 3 tbsp oil and fry the mutton pieces brown then remove into the same bowl.
4. In the same oil add in the sliced onions. Keeping flame on high fry the onions. While frying add in garlic,clove,cinnamon and salt. Keep stirring occasionally.
5. After few minutes of frying you would see the onions have loss most of its water and are turning brown. That's the time to add the fried mutton.
6. Next add in all spices. Give a good stir. Keep flame on low and keep stirring now and then. You will reach a stage when the oil will start to leave out in sides. It's time to add the left out mutton stock. Now Keep on high flame until the gravy starts boiling ,it would take 5 minutes. Then keep it simmer and close the lid.
7. After 10 minutes check for the gravy. It should have reduced and thickened. Check for seasoning and garnish with coriander leaves.
