Chicken Hakka Noodles

I have been getting requests for many non kashmir cuisine recipes. This recipe if for those readers who would like to try on other recipes too.

INGREDIENTS :
2 packets egg noodles
1 small cup diced chicken
1 small cup chopped carrots
1 small cup chopped capsicum
1/2 cup chopped cabbage
2-3 green chillies chopped finely
1 tbsp garlic paste
2 tbsp dark soya sauce
1 tsp pepper powder
Salt
Oil

METHOD :
1. cook the noodles as per instruction given in packet and blanch them in cold water and keep it for draining.
2. In a wok or big kadai add in 1 tbsp oil and add the diced chicken. Season with some salt and fry them golden. Take it out in a bowl.
3. In the same wok add in 1 tbsp oil and add the garlic paste. Let it fry mildly don't burn it just sauté it. Then add in the chopped green chilly. Sauté for few seconds.
4. Now add in all chopped vegetables. Sauté them for few seconds. Add in pepper powder and dark soya sauce. Mix it well.
5. Now add the fried chicken. Mix up
6. Add in salt if required
7. Now add in the drained noodles.  Toss all well. Keeping the flame on low let the noodle get coated well. Once the noodles are evenly mixed with the vegetable. Switch off and serve it hot with ketchup.

Tips:
1.For vegetarian version you can use plain noodles and chicken can be replaced with tofu.
2. You can also add in other vegetables of your choice.
3. While boiling noodles always add 1 tbsp oil.  This keeps the noodles from sticking.
