Crispy chicken kebab

Since I love kebabs I usually experiment with the ingredients and come up with new recipe. This recipe is one such experiment. The usage of besan flour brings a different texture to the kebabs making them crisp from outside and juicy from Inside.

Ingredients:
500 gram chicken mince
3 green chillies
1 tbsp ginger and garlic paste 
1 tbsp chopped coriander leaves
1 tsp kashmiri red chilly powder
1/2 tsp turmeric powder
2 tbsp besan / gram flour
1 tsp ghee
Salt to taste

Method :
Wash the mince well and drain the excess water pressing with your hand. In a food processor add in mince,green chillies,ginger and garlic paste,salt,red chilly powder,turmeric powder and blend it into a smooth paste. Transfer the mince mixture into a bowl. Add in besan,ghee and coriander leaves. Mix all this well. With help of your hand take a small mixture and shape into kebab. Do this with rest of the mixture and place it on to  a plate and refrigerate for an hour.
Heat oil in kadai and fry the chilled kebabs in medium flame until crisp and golden. Serve them hot with ketchup or mint chutney.
