Brindi Fry ( Bhendi Fry/ ladies finger fry/ okra fry)

This recipe is the best way you can eat this wonderful vegetable. I like it simple with minimal spices. As a side dish it goes well with any main dish.

INGREDIENTS
:
500 grams ladies finger
2 green chillies
1 1/2 tsp red chilly powder
1/2 tsp turmeric powder
Salt to taste
Oil for cooking

METHOD:
Wash ladies finger well. Cut them into small slices discarding carefully any rotten one. Keep them in colander for few minutes to drain any extra water.
Heat oil in a pan/ kadai. (I used 4 tbsp)
Once oil is hot add in the drained sliced ladies finger. Fry them on high for 10 minutes stirring occasionally. This will dry dry up the moisture in them and it won't get sticky.
Then add in salt and spices and chopped green chillies. Stir well. Fry on high flame again stirring occasionally. Once it's cooked you will see they are browned. Switch off. Serve warm with Rice or Roti. Enjoy!!!!
