Cauliflower is one of the tastiest vegetables which can be cooked in various ways. One of my favourite recipe is this one. Very less ingredients to go hence the taste of cauliflower stands out.
INGREDIENTS:
1 medium cauliflower
1 big onion
4 garlic pearls
1 tsp zeera
1 tbsp red chilly powder
1/2 tsp turmeric powder
1 green chilly chopped
Oil for cooking

Salt as per taste

METHOD:
1. Clean and wash cauliflower florets in several changes of water and let it drain in colander.
2. In a cooking pan heat 3 tbsp oil, add thinly sliced onion and chopped green chilly. Saute for few seconds.
3. Add in zeera , garlic and drained cauliflower.
4. Fry cauliflower with onions for about 5 to 10 minutes. Then add salt to taste.
5. Add in turmeric and red chilly powder saute well. Add a splash of water and let the spices coat the cauliflower well.
6. Oil will start to leave on sides. It's time to add 2 glasses of water.
7. Once the gravy starts to boil. Reduce it to low and simmer down for 5 minutes.
8. After 5 minutes increase the flame and saute well. Check for tenderness of cauliflower. It must be soft but have a crunch. Switch off and serve with roti / rice.

Tip:
*You can add in one diced potato for extra flavour.
*The recipe is spicy as per my like but you can reduce the heat by using less chilly powder.
