Mexican Fried Rice

Sometimes when I am bored to make any curry I go for fried rice.Today I am sharing is a Mexican fried rice which is easy and delicious.

Ingredients
4 cups cooked rice
150grams chopped mutton
1 small onion finely chopped
1 big tomato peeled and pureed
1 cup frozen mix Mexican vegetables (peas, carrots, red bell pepper, sweet corn)
1tsp garlic paste
1 tsp red chilly powder
1tbsp cilantro/coriander leaves
1/2 tsp cumin powder
Salt as per taste
Olive oil 1tbsp

Method;
In a big non stick vessel heat up 1tbsp oil once its hot add in chopped mutton and fry for few minutes until you see it's browned. Then add in 1tsp garlic paste. Stir fry nicely and then add in chopped onion and tomato puree together. Stir fry until oil starts to leave out. Add in salt,red chilly powder and cumin powder give a good stir. Next add in the cooked rice mixing well seeing that the mixture coats well with all the rice grains. Stir fry for few more seconds and then add in washed and drained mix Mexican veggies. Give a good stir and mix all well. Check for seasoning. If it needs more salt or chilly powder then you can add now. Stir well for few more minutes letting the veggies absorb flavor and at end add in chopped coriander leaves. Mexican fried rice is ready to serve.

Tip:
At home making mix Mexican veggies:
In a vessel add in chopped bell peppers and carrots. Add in corn and peas add in 2 cups water. Stir well and close the lid. Keep this on stove on sim for 5minutes. After 5 minutes open the lid. The vegetables would have soften up. Drain it in colander and  veggies are now ready to use in recipe. You can reserve this water and use it in other recipes instead of water.

Note:
Veggies should have a crunch in fried rice. Don't overcook them.
