Well Mushrooms are eaten occasionally at Kashmiri homes mostly relished when servedin wazwaan. The most expensive variety of mushroom called Gucci is found in Kashmir and you can find them in menus of expensive restaurants. It has got a spicy nutty flavour which makes it stand out among other mushrooms. Today I am using portabello mushrooms it's easily found in markets. If unable to find you can use any other meaty mushroom.
Ingredients :
250grams mushroom( washed and sliced thickly)
3 medium size tomatoes
2 medium size onions
2 gren chillies
4 garlic
1 tsp red chilli powder
1/2tsp turmeric powder
1/2 tsp zeera powder
Oil
Salt to taste
A pinch crushed Kasoori methi /dry fenugreek leaves
Coriander leaves for garnish
Method:
1.Heal oil in a pan or wok.
2. Add in chopped onions and fry till soft.
3. Add in washed and sliced mushrooms.
4. Stir fry the onion and mushrooms until they brown a bit. A very nice aroma will release from mushrooms. ( mushrooms tend to absorb oil don't tempt to add in more oil )
5. Add in finely chopped tomatoes and slit green chillies and garlic.
6. Stir fry all until you see tomatoes are soften up.
7. Add salt and all spices except Kasoori methi.
8. Stir fry well. Add a half a cup of water and let it boil.
9. Once a thick gravy is formed and oil has started to leave out. Add the kasoori methi. Stir well
10. Garnish with coriander leaves and serve with Rice or Roti. Goes well with both.
