Sooji ladoo / Sweet semolina balls


Semolina is kind of often used in preparing sweets as it has a unique earthy flavour and crispy texture when roasted. Unlike other sweets it doesnt need much sweetness. You can limit  the sugar in the recipe and still have a yummy taste.
Here I am making laddoo which is very easy and gets done in very less time.
Ingredients:
1 cup fine semolina
1/2 cup sugar
5 tbsp Ghee
1 tsp cardamom powder
2 tbsp mixed dry fruits
Milk less than half cup
Method:
1. In a pan heat 1 tbsp ghee and roast the semolina on low flame until its aromatic and has change in color. Let it cool a little.
2. In same pan heat remaining ghee and fry dry fruits until light brown. Keep it aside.
3. In a grinder add in sugar and grind it to fine powder.
4. In same grinder add in roasted semolina and make fine powder.
5. In a bowl add in grinded semolina and sugar and cardamom powder. To this add the dry fruits ghee mixture and mix well.
6. If mixture is not smooth then add in some warm milk little by little.
7. With help of your hand make small balls which are in ladoo shape.
8. After all ladoos are made decorate it with sliced pistachios or cashews.
9. Can be stored in fridge in an air tight container upto a week.
