Kheema Masala / Kheema filling

This kheema Masala or bhuna kheema masala is my basic recipe for most of the dishes which I prepare during Ramadan. It goes with many dishes -  kheema samosa , kheema paratha , kheema naan, kheema stuffed pastries. Etc 

Kheema Masala


Ingredients:
500 grams lamb mince / kheema
2 onions finely chopped
1 tbsp ginger and garlic paste
2 green chillies chopped
1tbp chopped coriander leaves.
1 tsp red chilly powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp garam masala powder
Salt as per Taste
Oil

Method :
1. Rinse kheema/ mince let it drain in colander completely.
2. In an open pan pour 2 tbsp oil. Once hot throw in onions.
3. Stir fry onions until translucent and soft. Add in ginger and garlic paste.
4. Stir fry until raw smell goes.
5. Add in mince/ kheema. And start frying.
6. Once the kheema loses out moisture add in all spices, green chilly and salt.
7. Keep frying on medium flame until the Kheema is totally dry.
8. Switch off. Garnish with coriander leaves once completely cooled
9. Kheema masala is ready.
Use this in various recipes. Freezes well.
