Gajar Methi sabzi( carrot and fenugreek leaves)

Ingredients
1 cup carrot chopped
1 cup methi leaves
4 garlic pearls
1 clove
1 1/2 tsp red chilly powder
1/2 tsp turmeric powder
1/2 cumin powder
Salt to taste
Oil
Water
METHOD:
Wash methi leaves thoroughly in many changes of water and keep it to drain.
In a kadai add oil 4 tbsp let it heat up. Add in chopped carrot and whole garlic pearls. Saute for few minutes until you see carrots are changing colour. Add in some salt. Give a good stir. Then add in washed and drained methi leaves. Stir well. They will reduce in size. Next add in spices  ( red chilly powder/turmeric/cumin powder) mix all well keep the flame on lowest. After few minutes add in one cup of water. Mix all well. Let it come to a boil then close it with lid and simmer for 10 minutes. Open lid and check for seasoning. Sabzi is ready. Enjoy
